As the winter chill sets in, there’s nothing more comforting than a warm bowl of soup, especially when it’s packed with nutrients. This spinach soup is easy to prepare, nourishing, and deliciously warming—just the thing for cold days.
2 cups fresh spinach leaves 1 medium onion, chopped 2 cloves garlic, minced 1 cup vegetable or chicken broth ½ cup milk or cream (for added creaminess) Salt and pepper to taste 1 tsp olive oil
In a pot, heat olive oil and sauté onion and garlic until soft. Add spinach leaves and cook until wilted.
Pour in the broth, bring to a simmer, and cook for 5–7 minutes. Blend until smooth, adding milk or cream if desired.
Season with salt and pepper, then serve hot, garnished with a swirl of cream or croutons for extra texture.
