As autumn leaves have started turning brown giving the signal for the arrival of winter, you will soon start craving soups and hot beverages. Among all the recipes, carrot soup is a must-try for its warmth and delicious taste.
3 cups vegetable broth 1 tbsp olive oil 3 garlic cloves ½ onion 1 pinch of pepper 1.5 cup grated carrot 1 tsp coconut milk or fresh cream Salt to taste 1 tbsp apple cider vinegar 1 tsp chopped coriander leaves 1 tsp ginger
Heat oil in a pan and saute onions with pepper and salt until they soften.
Add carrots to the pan and cook them until they are mushy.
Top the pan with vegetable broth, vinegar, and grated ginger.
Let the ingredients boil and simmer for at least 20 minutes.
After cooling the blend, grind the ingredients into a smooth paste.
Sift the soup through a sieve, and garnish it with fresh cream and coriander leaves.
