1 cup all-purpose flour 1 teaspoon baking powder 1/4 teaspoon salt 1 egg 1/2 cup milk 1 cup chopped spinach 1 tablespoon butter Oil for frying
Whisk together flour, baking powder, and salt.
Whisk together egg, milk, and melted butter.
Combine wet and dry ingredients. Stir in the chopped spinach.
Heat oil in a non-stick pan over medium heat. Pour batter and cook until golden brown on both sides.
Serve hot with maple syrup, honey, or fruit.
