Corn rice is a recipe for soulful indulgence when you are feeling low or in the mood for binge-watching throughout the night. It is the easiest recipe to cook and treat your taste buds after a long hectic day.
1 cup corn kernels 1-2 green chillies 3 cups cooked rice ¾ cup bell pepper 2 minced garlic cloves ½ tsp black pepper Salt to taste 2 tbsp milk 2 cheese slices 1 medium onion Oil for cooking 2 tbsp coriander leaves 1 tsp Peri peri masala, oregano
Wash, soak, and prepare rice. Keep it aside for an hour to cool off.
Take a pan, melt butter or heat oil in it. Saute onions and bell peppers while the kernels are boiled.
Add spices to the pan along with corn and let the ingredients come together.
Add milk and cheese so that the mixture is creamy. Sprinkle peri peri masala and oregano on the top.
Add cream to make the mixture creamier. This step is optional.
Toss cooked rice into the pan and garnish the dish with oregano and peri peri masala before serving.
