Enjoy grilled corn in this refreshing open toast recipe that is sweet, savoury and cheesy – making it the perfect evening snack for when you need something small but filling.

2 slices sourdough, toasted ½ cup corn kernels, grilled and shucked ¼ cup cream cheese ¼ cup feta cheese 1 tablespoon mayonnaise 1 teaspoon smoked paprika 2 cloves garlic, minced 1 spring onion greens, chopped 3-4 slices jalapeno, chopped Juice of 1 lemon

Combine the grilled corn kernels, cheeses, lime juice, paprika, garlic and mayonnaise in a mixing bowl.

Add the chopped jalapenos and mix before placing a scoop or two of the corn mixture on each slice of toasted sourdough.

Sprinkle the spring onion greens on top and serve with some lemonade or iced coffee.
