If your mornings are hectic because you spend a lot of time wondering what to cook for breakfast, add appe to the list of your staples. This South India dish is healthy, nutritious, and easy to make.
2 cups semolina Salt to taste 1 cup curd ½-1 cup water ⅔ cup boiled corn ½ tsp red chilli powder 2 tbsp ENO or fruit salt 2 tbsp ghee or oil
Prepare a thick mixture of semolina, curd, and water. Keep it aside for 20 minutes.
While the mixture rests, boil corn kernels with a sprinkle of salt.
Add salt to the semolina mix along with spices and corn.
Right before you are ready to cook appe, add fruit salt.
Grease appe moulds with ghee and drop in a spoonful of corn-semolina mix in each.
After cooking the base, flip appe to cook the other side. Enjoy them with chutney, ketchup, and hot garlic sauce.
