Beat the summer heat with this refreshing and hydrating Cooling Watermelon Pudding. With its delightful combination of juicy watermelon and creamy texture, it's the perfect treat to combat dehydration.
4 cups watermelon chunks 1/2 cup sugar 2 tablespoons lemon juice 2 tablespoons cornstarch 1/4 cup water Fresh mint leaves and watermelon slices for garnish
Blend watermelon chunks until smooth.
In a saucepan, combine watermelon puree, sugar, and lemon juice. Heat over medium heat until sugar dissolves.
Mix cornstarch with water, then add to the saucepan. Stir continuously until pudding thickens.
Remove from heat, let it cool, then pour into serving bowls and refrigerate for a few hours.
Garnish with fresh mint leaves and watermelon slices.
