Cooling Cucumber And Mint Salad To Enjoy For Light Lunch

A refreshing salad made flavoured with fresh herbs and an easy vinaigrette, the cucumber mint salad is a quick option to eat healthy during busy work days. Enjoy a bowl of this as it is or along with some grilled chicken or tofu.

INGREDIENTS

2 English cucumbers, sliced ½ onion, sliced 2 tablespoons extra virgin olive oil 1 tablespoon vegetable oil 2 tablespoons vinegar 2 teaspoons sugar ½ cup fresh mint, chopped 1 teaspoon black pepper powder Salt, to taste

STEP 1

Salt the cucumbers adequately and allow them to sit in a strainer for 10 minutes.

STEP 2

Toss into a bowl along with the mint and onions before setting aside.

STEP 3

Combine the remaining ingredients to make a dressing and drizzle generously over the cucumber-mint-onion mixture.

STEP 4

Mix well and refrigerate for 30 minutes before serving cold.
