Celery is the quintessential summer food; comprising 95% water content, the aromatic vegetable keeps one hydrated and rejuvenated on sweltering summer days. Incorporate celery into an easy soup dish to reap the cooling benefits of the vegetable. Here’s a simple homemade celery soup recipe.
1 cup of water 1 peeled garlic clove 300 grams of sliced celery 200 grams peeled and chunked potatoes 500 ml of vegetable stock 100 ml milk 2 tablespoons of olive oil ½ teaspoon salt Toasted bread, for serving
In a pan on medium heat, warm the oil and add the celery, garlic, and potatoes. Douse these ingredients in oil.
Introduce salt and water to the mixture, and stir for about 15 minutes or till the mixture is completely cooked.
Add vegetable stock, let the concoction boil and then simmer for approximately 20 minutes. Continue stirring till the potatoes disintegrate and the celery becomes tender.
Puree the soup in a blender; once blended, add milk and seasonings, and blitz the mixture once again. Savour or serve the soup with bread, as needed.
