Marination is Key

Allow the mutton to marinate in ginger garlic, spices and mustard oil for at least a 2-3 hours, This imparts a rich flavor and tenderizes the meat.

Use Mustard Oil

Champaran Mutton is renowned for its distinct flavor, partially attributed to the use of mustard oil. Heat the mustard oil until it reaches its smoking point to reduce its pungency, then cool it slightly before use.

Slow Cooking

In the traditional preparation of Champaran Mutton, a handi (clay pot) is often used for slow cooking over low heat. Alternatively, you can also use a heavy-bottomed pan or a pressure cooker to gradually cook the meat until it becomes tender, allowing the flavors to meld perfectly.
