Bengali-style Alur Dom is a lightly spiced, mildly sweet potato curry. Made with onions, tomatoes, and spices, it’s rich in flavour. This traditional dish is perfect when paired with luchi or poori.
5 to 6 medium-sized potatoes or 18 to 20 baby potatoes 3 tbsp mustard oil 1 tej patta ½ tsp Kashmiri red chilli powder ½ tsp coriander powder ½ tsp turmeric powder 1 tsp cumin powder 1 cup water ½ tsp sugar Salt as required 2 onions, 1 inch ginger, 2 to 3 garlic cloves (for paste) 1 large tomato 1.5 inches cinnamon, 3 cloves (for powder) 1 tsp ghee
Boil and peel the potatoes, then lightly prick them with a fork.
Heat mustard oil in a pan and fry the potatoes until they turn light golden.
In the same oil, sauté the tej patta until fragrant for a few seconds.
Add the onion, ginger, garlic paste, and sauté until light brown.
Mix the tomato puree, turmeric, chilli powder, cumin powder, coriander powder, and sugar.
Add the fried potatoes and stir until well-coated with the masala mixture.
Pour in water and cinnamon-clove powder, and simmer until the gravy thickens.
