Pumpkin soup is a comforting, creamy dish made with tender pumpkin, aromatic spices, and a hint of coconut milk. Its velvety texture and warm flavours make it perfect for cozying up on cooler days. Garnished with fresh herbs, it’s a delightful, nourishing meal.
500 gms pumpkin 1 onion 2 garlic cloves 1 carrot 2 cups vegetable broth or water 1 cup coconut milk 1 tbsp olive oil 1/2 tsp ground cumin 1/4 tsp ground nutmeg Salt and pepper to taste Fresh parsley or cilantro
Heat olive oil in a pot. Add the chopped onion, garlic, and carrot. Sauté until the onion becomes translucent.
Add the pumpkin cubes to the pot and stir to combine with the sautéed vegetables. Cook for about 5 minutes.
Add in the cumin, nutmeg, salt, and pepper. Pour in the vegetable broth and bring to a boil.
Reduce the heat and let it simmer for about 20 minutes.
Use an immersion blender to puree the soup until smooth. Stir in the coconut milk, and let the soup simmer for another 5 minutes..
Adjust seasoning to taste. Garnish with fresh parsley or cilantro.
