Comforting Peas Pesto Soup For A Quick Work Day Lunch

This easy but cosy bowl of pea soup flavoured with a herby pesto packs all the flavour, along with being soothing to have while busy during lunchtime.

INGREDIENTS

2 cups frozen peas 4 tablespoons pesto 2 spring onions, diced Juice of ½ lemon Salt, to taste

METHOD

Bring some water to boil in a pot before adding the peas to let them soften and thaw.

METHOD

Drain and add to a blender, along with the pesto, spring onions and lemon juice.

METHOD

Add some of the warm water and grind the mixture into a smooth liquid.

METHOD

Transfer the ground peas liquid to the pot and add some more warm water, to adjust the consistency.

METHOD

Bring to a simmer and season with salt. Serve hot.
