Comforting Khao Suey Soup By Arti Wadhawan

This soup is loaded with a lot of delicious ingredients such as peanuts, besan, coconut milk and aromatic spices. Khao suey soup is perfect to relish with all three meals of the day.

Ingredients

3 tbsp oil (except sarson), 1 nos bay leaf, 1/2 tsp jeera, 0-1 nos peppercorns, 1 nos finely cut green chilli, 1 nos garlic clove chopped, 2 tbsp ginger finely chopped, 1/2 cup onions chopped, 1/2 tsp turmeric powder, 2 tsp coriander powder, 1 tbsp besan, 3 cups (approx 300 ml) coconut milk, 1 cup water, as required salt per taste, 2 cups boiled noodles, 2 tbsp roasted peanuts, 2 tbsp chopped n fried burnt garlic, 1 tsp chilli flakes, 2 tbsp chilli oil, 1 cup roasted noodles

Step 1

Take a pan and add oil to heat on a medium flame Add jeera in this hot oil till crackle Add bay leaf, black peppercorn n green chilli, onions and sauté for 1 minute then add chopped garlic n ginger in it and give a stir for few seconds.

Step 2

Now add all spices and salt to it, stir for few more seconds. Add besan and mix and stir with all the spices and chopped veggies.

Step 3

Then add water and boil it. Now pour coconut milk in it and boil only once. Turn off the flame. Now pour this soupy gravy in a bowl.  In soup cups place boiled noodles and pour the gravy over it.

Add all accomplishments for extra crunch. Serve hot.
