Broccoli shredded soup is a creamy and comforting way to warm up on cold days. It is smooth and mild, a light but filling meal. It is packed with fibre and vitamins; this soup is yummy and healthy, perfect for winter nights.
2 cups broccoli florets 1 onion 2 tbsp butter 2 tbsp all-purpose flour 2 cups milk 1 cup vegetable broth 1 ½ cups shredded cheddar cheese Salt to taste Pepper to taste ½ tsp garlic powder ½ tsp mustard powder
Steam or blanch the broccoli florets until tender.
In a large pot, melt the butter over medium heat. Add the chopped onions and cook until soft.
Add the flour to the onions and cook, stirring constantly, for 1-2 minutes.
Add the milk and vegetable broth, whisking to avoid lumps. Bring to a simmer.
Add the steamed broccoli, garlic powder, mustard powder, salt and pepper. Cook for 5 minutes.
Add the shredded cheddar cheese and cook until melted. Adjust seasoning and serve hot with a slice of bread.
