Having a bowl of cold soup during the hot summer might be unheard of before but this watermelon gazpacho recipe is truly worth its name and delivers in flavour.
2 cups diced watermelon, deseeded 1 cucumber, chopped 1 onion, chopped 1 red bell pepper, chopped 2 tomatoes, chopped ¼ cup mint leaves 1 green chilli Juice of 1 lemon ¼ cup watermelon, chopped Salt and pepper, to taste
Blend the diced watermelon, tomatoes, bell pepper and green chilli to a smooth liquid.
Pour into a bowl and add the chopped cucumber, onion and watermelon.
Add the lemon juice, mint leaves, salt and pepper. Stir to combine.
Refrigerate for 4-5 hours before serving cold.
