Indulge in the delightful flavors of these quick and easy spicy coconut noodles. With a perfect blend of red curry paste, coconut milk, and fresh vegetables.
250 grams rice noodles 1 tbsp vegetable oil 2 cloves garlic 1 red bell pepper 1 carrot 1 cup broccoli 1 cup snow peas 1 can coconut milk 2 tbsp soy sauce 1 tbsp red curry paste Fresh coriander Lime wedges
Cook the rice noodles according to package instructions. Drain and set aside.
Heat vegetable oil in a pan. Add minced garlic, red bell pepper, carrot, broccoli, and peas to the pan.
Stir-fry for 3-4 minutes. In a bowl, whisk together coconut milk, soy sauce, and red curry paste.
Pour the coconut milk mixture over the vegetables in the pan. Stir well to combine.
Add the cooked rice noodles to the pan and toss until they are evenly coated with the sauce.
Remove from heat and garnish with fresh coriander! Enjoy these creamy noodles!
