Coconut And Litchi Ice Cream, Perfect Summer Homemade Delight

The tropical sweetness of litchi fruit is combined with the creamy richness of coconut in this delectable frozen dessert.

Ingredients

2 cups fresh litchis 1 cup coconut milk 1 cup heavy cream 3/4 cup sugar 1 tsp vanilla extract Salt

Step 1

Take litchis clean and peel them. In a blender puree the litchis until smooth. Set aside.

Step 2

Now In a pan, combine the coconut milk, heavy cream, sugar, vanilla extract, and salt. Heat and stir.

Step 3

Allow the coconut milk mixture to cool for a few minutes. Then, gradually whisk in the litchi puree until well combined.

Step 4

Transfer the mixture to a bowl or container and cover with plastic wrap or a lid. Chill in the refrigerator for at least 4 hours.

Step 5

Once the mixture is thoroughly chilled, pour it into an ice cream maker and churn according.

Step 6

Now freeze it again. When it’s done serve  and garnish with fresh litchi and shredded coconut.
