Nimona is a winter classic from North India made with fresh green peas, a pinch of spices and ghee. This comforting mildly spiced dish is enjoyed in Uttar Pradesh during winter. It goes well with hot rotis or rice for a warm meal. Here is how to make it:
2 cups fresh green peas (matar) 1 potato 1 onion 1-inch ginger 2 green chillies 1 tsp cumin seeds ½ tsp turmeric powder ½ tsp red chilli powder Salt to taste 2 tbsp ghee Fresh coriander leaves
Mash fresh green peas in a blender, leaving some texture.
Heat ghee in a pan over medium heat. Add cumin seeds and let them pop.
Add finely chopped ginger, green chillies and onion. Saute until onions are golden brown.
Add diced potatoes, turmeric and red chilli powder. Cook for 5 minutes, stirring occasionally.
Add the mashed peas and salt. Cook for 10-15 minutes, stirring often, until peas are done.
Garnish with coriander leaves. Serve hot with rotis or rice.
