Heady with the aroma of cinnamon, this light sponge cake is perfect to pair with a cup of coffee in the evenings or enjoy with a scoop of ice cream for dessert.

1 cup flour 60 grams butter 2/3 cup superfine sugar 1 teaspoon vanilla extract 1 egg ¼ cup milk 1 teaspoon baking powder 1 pinch salt 1 tablespoon granulated sugar 1 teaspoon cinnamon powder 2 tablespoons melted butter

Combine the butter and superfine sugar in a bowl and whisk well until combined.

Add the egg, vanilla extract, salt, flour and baking powder and mix thoroughly.

Pour the milk and fold in gently before transferring to a greased baking tin and evening the surface of the mixture.

Sprinkle the cinnamon, melted butter and granulated sugar before baking in a preheated oven at 170°C for 30 minutes. Serve warm.
