This sticky, aromatic gingerbread cake is the perfect festive treat to enjoy on its own, or while sipping on some coffee or hot toddy. Rich with the warm spices, oil and brown sugar, the cake is a treat that is hard to miss around this time of the year.

2/3 cup vegetable oil 2/3 cup maple syrup 2/3 cup brown sugar 2/3 cup salted caramel spread 8 soft prunes, chopped 2-inch piece ginger, grated 2 teaspoons cinnamon powder 2 teaspoons ginger powder 1 teaspoon allspice powder ¼ teaspoon clove powder ¼ teaspoon black pepper powder 1 cup oat milk 2 ¼ cups + 2 tablespoons all-purpose flour 1 teaspoon baking soda 2 teaspoons apple cider vinegar ¼ teaspoon salt

Preheat the oven to 170°C and line a baking tin with parchment paper.

In a saucepan, pour the oil, syrup, salted caramel spread, prunes, brown sugar and spices and heat until everything is melted.

Mix the baking soda with two tablespoons of water and the vinegar and set aside for a minute, while you whisk in the flour and salt into the warm mixture.

Add the vinegar-soda mixture and combine before pouring into the tin and baking in the oven for 45-50 minutes.

Check for doneness by gently touching the centre of the cake to see if it bounces back slightly.
