A classic roasted bird coated with tandoori spices, this turkey roast is sure to be a hit at your festive dinner party. What’s even better is that the leftovers can be repurposed into a hearty sandwich for your working lunch.

1 turkey, thawed and cleaned 1 cup Greek yoghurt 2 tablespoons ginger-garlic paste 2 teaspoons red chilli powder 2 teaspoons tandoori masala 1 teaspoon garam masala ½ teaspoon turmeric powder Juice of 2 lemons 1 pinch nutmeg powder 1 teaspoon cumin powder 1 small bunch cilantro stems ¼ cup chopped cilantro 3 tablespoons oil Salt, to taste Melted ghee, for basting

¼ cup all-purpose flour 1 cup hot water Leftover turkey drippings

Pat the turkey dry thoroughly before you place it on a rack and season generously with salt.

Meanwhile, combine the Greek yoghurt with the spices, oil and lemon juice and whisk to a smooth paste.

Using a silicone brush, apply the yoghurt mixture generously on the outer surface and hollow interior of your turkey.

Tie the cilantro stems with a twine and place inside the turkey, for added flavour.

Allow the bird to marinate overnight or for a minimum of 8 hours, before you bring it to room temperature and place in a preheated oven to cook for 30 minutes at 230°C.

Remove the turkey out of the oven and reduce the temperature to 150°C before cooking the basted bird for another 30 minutes.

Repeat the process of basting and cooking until you insert a thermometer into the thickest part of the bird and read an internal temperature of 75°C.

Bast the turkey one last time as it turns brown and crisp on top and rest for a minimum of 45 minutes, before starting to carve the bird.

Collect the drippings from the tray into a cup and pour into a pan, along with the hot water and mix well.

Add the all-purpose flour, adjust seasoning and cook until it is glossy and slightly thick.

Slice and serve the turkey along with a portion of gravy and liberal sprinkling of fresh cilantro.
