These green cookies, infused with a peppermint flavour is extremely simple to make since it uses boxed cake mix. Chewy on the inside and crisp on the outside, make cookie sandwiches by placing a scoop of mint-chocolate chip ice cream between two of them.

1 box vanilla cake mix 8 tablespoons soft butter 2 eggs, room temperature 1.5 teaspoons peppermint extract 2 drops green gel food colour 1 teaspoon vanilla extract 3 tablespoons corn starch ¼ cup powdered sugar Red sprinkles

Whisk the butter and eggs until combined before adding in the food colour and flavouring extracts.

Add the cake mix and fold in gently to form a dough, before refrigerating for 5 minutes.

Divide the dough into equal portions and roll into balls.

Combine the powdered sugar and cornstarch in a separate bowl and roll each ball of cookie dough to cover on all sides with the dry mixture.

Add a few red sprinkles on top and place on a baking sheet and bake in a preheated oven at 190°C for 10 minutes.
