Mousse cake is a beloved festive treat which has become an important part of Christmas traditions around the world. Unlike the other mousse cake recipes, here is a simple and easier method to make this mousse cake at home without hassle.

Cake 1/2 cup (75 g) unbleached all-purpose flour 1/4 cup (55 g) sugar 2 tbsp sifted cocoa powder 1/4 tsp baking soda 1/3 cup (75 ml) water 2 tbsp (30 ml) canola oil 1 tsp (5 ml) white vinegar Chocolate Mousse 200 g dark chocolate, chopped 1 tsp gelatin 2 tbsp (30 ml) water 1/2 cup (105 g) sugar 2 cups (500 ml) 35% whipping cream

Preheat oven to 350°F (180°C). Butter an 8-inch springform pan and line it with parchment. Combine dry ingredients, add water, oil, and vinegar. Spoon into pan. Bake 10-12 mins. Let it cool without unmolding.

Melt chocolate, and let cool. Sprinkle gelatin over water, and let bloom for 5 mins. Heat 1/2 cup cream with sugar, and dissolve gelatin. Add to melted chocolate.

Whip remaining cream until stiff peaks. Fold into chocolate mixture. Spoon onto the cake. Refrigerate for 4 hours or freeze.

Unmold the cake onto a serving platter. If frozen, leave at room temperature for 1 hour. Place chocolate in a bowl. Set aside.

Boil the remaining cream in the microwave, and pour over the chocolate. Let melt for 1 minute. Stir until smooth. Pour over the cake, letting it run over the sides.
