Choddo Shaak is a traditional Bengali dish made with 14 varieties of leafy greens, symbolising the transition from inauspicious to auspicious times. Cooked with minimal spices, it’s a nutrient-rich preparation enjoyed especially during Kali Puja, celebrates health, renewal, and the harmony of nature.
500 gms Choddo shak (assorted greens) 1 small brinjal 2 tbsp mustard oil Panchphoron Mixture of seeds – kalonji (black cumin) Methi (as per taste) Fennel (as per taste) Cumin (as per taste) 1 tsp mustard seeds 1 red dry chilli 1 tsp turmeric Powder Salt to taste Green chilli as per taste 1 Bori (sun-dried pulse flour dumpling)
Clean the bundle of choddo shak and wash thoroughly. Chop the greens and cut the brinjal into small pieces.
Marinate the brinjal pieces with 1/2 tsp of turmeric powder and salt. If you are using Bori, fry them first and keep aside.
Heat 1 tbsp of mustard oil and lightly saute the brinjal pieces, keep aside. Then heat the remaining 1 tbsp of mustard oil and tamper with pachphoron and dry red chillies
Add the greens and pinch of turmeric powder, saute lightly. Put the lid on until it gets reduced and partially cooked.
Add brinjal and salt and allow to cook. Add green chilli.
Once the water evaporates, add bori. Serve hot with steamed rice
