Give your traditional teatime snack a makeover with this incredible chocolate chip rusk recipe. They enhance the texture and flavour of the popular tea accompaniment and are fairly easy to prepare. Here's a recipe for you:
2 cups flour 1/2 cup sugar 1 tsp baking powder 1/4 tsp salt 1/2 cup melted butter 2 eggs 1 tsp vanilla 3/4 cup chocolate chips
Preheat oven to 350°F (175°C). Line a baking sheet with parchment.
Combine flour, sugar, baking powder, and salt. Whisk melted butter, eggs, and vanilla; mix into dry ingredients. Fold in chocolate chips.
Form two logs (12"x2"). Place on baking sheet. Bake for 25-30 mins. Cool 10 mins. Slice into 1/2" pieces.
Second bake slices for 10-15 mins until crispy.
