Crispy on the outside and flaky on the inside, flavoured delicately with plenty of spring onions, these scallion pancakes are a delicious meal or light supper to enjoy with an umami-packed dipping sauce.

2 cups all-purpose flour 2 cups chopped spring onions 4 + 2 tablespoons vegetable oil 1 tablespoon five spice powder ¾ cups warm water Salt, to taste

Heat the two tablespoons of oil in a pan and sauté the chopped spring onions until wilted.

Add the five-spice powder and season with salt, before setting aside to cool.

Combine the flour, remaining oil and a pinch of salt to knead into a smooth dough.

Roll out into a flatbread and stuff with the spring onion filling.

Bring the edges towards the centre and seal the filling within the dough.

Roll out again gently and toast on a hot pan on both sides until crispy and browned. Serve hot.
