With a flavoursome Asian dressing and crunchy noodles for texture, this easy to make salad offers itself up as a filling and delicious lunch option for working days.
2 tablespoons soy sauce 3 tablespoons vinegar 1 tablespoon sesame oil 2 tablespoons vegetable oil 1 tablespoon minced ginger-garlic ½ teaspoon crushed black pepper ½ teaspoon sugar
2 cups Chinese cabbage, shredded 1.5 cups red cabbage, shredded 1 carrot, grated 1 cup shredded chicken ½ cup green onions, chopped ½ cup crunchy noodles 1 teaspoon sesame seeds
Combine all the ingredients for the salad in a large mixing bowl.
Mix together the ingredients for the dressing in a separate smaller bowl.
Pour over the salad ingredients and toss to combine well. Serve at room temperature.
