Chilled Saunf Sharbat To Beat The North India Heatwave

Saunf Sharbat, a delightful and cooling beverage, is perfect for the hot summer months. Made from fennel seeds (saunf), this drink not only refreshes but also aids digestion and provides a host of health benefits. Here’s a simple recipe to prepare this aromatic and refreshing sharbat at home. 

Ingredients

1/2 cup fennel seeds (saunf) 1 cup sugar 4 cups water 1/4 cup lemon juice A pinch of salt Ice cubes Fresh mint leaves for garnish (optional) 

Step 1

Begin by soaking the fennel seeds in 2 cups of water overnight. This helps in releasing their flavour and essential oils. 

Step 2

The next day, blend the soaked fennel seeds along with the water until you get a smooth mixture. Strain this mixture using a fine sieve or muslin cloth to extract the fennel concentrate. 

Step 3

In a saucepan, combine the fennel concentrate, sugar, and the remaining 2 cups of water. Bring this mixture to a boil and then simmer until the sugar completely dissolves. Let it cool. 

Step 4

Once cooled, stir in the lemon juice and a pinch of salt. Refrigerate the sharbat for at least an hour.

Step 5

Pour the chilled saunf sharbat into glasses over ice cubes. Garnish with fresh mint leaves if desired.
