Vegetable noodles are a fun, colourful way to get kids to enjoy their veggies. With a mix of carrots, bell peppers, and cabbage, these noodles are not only tasty but also packed with nutrients, making them a wholesome, kid-friendly meal option.
200 gms noodles 1 tbsp oil 1 onion 1 bell pepper 1 carrot
1/2 cup cabbage 1/4 cup green beans 2-3 garlic cloves 1 tsp soy sauce 1/2 tsp chilli sauce 1 tsp vinegar Salt and pepper Green onions
Cook the noodles according to package instructions until al dente. Drain, rinse with cold water, and set aside.
Heat oil in a large pan or wok on medium-high heat. Add minced garlic and sliced onions, and sauté until onions are soft.
Add carrots, bell peppers, cabbage, and green beans. Stir-fry for 3-4 minutes until the vegetables are slightly tender but still crisp.
Add soy sauce, chilli sauce (if using), vinegar, salt, and pepper. Stir to combine and coat the vegetables evenly.
Add the cooked noodles to the pan, and toss everything together gently until well mixed. Garnish with chopped green onions.
