Chicken Sambar, a part of Kerala cuisine, is a twist on the classic sambar. Combining the classic flavours of sambar with tangy, spicy chicken is a creative way to add innovation to meals. Here is how to make it:
For the chicken marinade: 300g chicken pieces ½ tsp turmeric powder ½ tsp salt For the sambar: 100g toor dal 2 tbsp oil ½ tsp mustard seeds ½ tsp cumin seeds 1 onion 2 tomatoes 2 green chillies 1 carrot 1 drumstick ½ tsp turmeric powder 1 tbsp sambar powder Salt to taste 500 ml water 1 tbsp tamarind pulp Fresh coriander leaves
Mix chicken pieces with turmeric and salt. Keep for 15 minutes.
Rinse toor dal and pressure cook with 300 ml water until soft, then mash and keep aside.
Heat oil in a pan, add mustard and cumin seeds until they splutter. Add onions and sauté them.
Add tomatoes, green chillies, carrots, and drumsticks. Cook for 5 minutes.
Add marinated chicken, turmeric, sambar powder and salt. Sauté for 5-7 minutes.
Add mashed dal and water. Simmer until chicken and veggies are cooked.
Add tamarind pulp, simmer for 5 minutes and garnish with coriander leaves.
