Chicken Malai Tikka is a creamy appetiser that perfectly combines tender chicken, rich cream, and aromatic spices. You see this at every Indian party: the mild heat of green chillies, the freshness of coriander, and the richness of malai (cream). Perfect for celebrations or a weekend treat, this recipe will help you get restaurant-style tikkas at home.
500g boneless chicken pieces ½ cup fresh cream (malai) ¼ cup hung curd 2 tablespoons cashew paste 1 tablespoon ginger-garlic paste 2 green chillies, finely chopped ½ teaspoon garam masala ½ teaspoon black pepper powder Salt to taste 1 tablespoon lemon juice. 2 tablespoons fresh coriander, finely chopped 1 tablespoon butter (for basting)
In a large bowl, mix fresh cream, hung curd, cashew paste, ginger-garlic paste, green chillies, garam masala, black pepper, salt, and lemon juice.
Add the chicken pieces to the marinade; make sure they are well coated. Cover and marinate for at least 2 hours or overnight for best results.
Preheat your grill or oven to 200°C. Thread the marinated chicken onto skewers.
Place the skewers on the grill, and bake with butter occasionally, till golden and cooked (about 15-20 minutes).
Sprinkle fresh coriander and serve hot with mint chutney.
