A hearty chicken stew loaded with peppers, sausage and robust spices, the gumbo curry is great for when you want to spend more time in the kitchen and enjoy a delicious meal.

350 grams boneless chicken thighs 1 encased sausage, sliced 1 onion, chopped 1 capsicum, chopped 8-10 cloves garlic, minced 2 sticks celery, chopped 1 tablespoon all-purpose flour 3 tablespoons olive oil 1 cup tomato puree 1 cup chicken stock 1 teaspoon cumin powder 1 teaspoon dried thyme 1 teaspoon smoked paprika 1 teaspoon red chilli powder 1 bay leaf ½ cup lady’s finger, sliced Salt and pepper, to taste

Season the chicken thighs generously with salt and pepper; set aside to marinade.

Heat the olive oil in a large pot and add the flour to cook until it turns the colour of melted chocolate for 12-15 minutes.

Make sure to continue stirring to avoid the flour from burning, and once it reaches the desired consistency, add the onion and capsicum.

Cook for a couple of minutes and add the bay leaf, garlic and spices.

Mix well and lower the heat, before adding in the tomato puree and chicken stock.

Stir everything to make sure there are no lumps, before adding the chicken thighs and sausage.

Season generously with salt and pepper and allow everything to simmer for at least 30-40 minutes.

Once the raw smell disappears from the simmering gumbo, add the sliced okra and allow it to cook for a few more minutes before turning off the heat. Serve warm with rice.
