Chicken Ghee Roast Dosa is a combo of two South Indian superstars: Chicken Ghee Roast and Dosa. A crispy dosa stuffed with tender, spicy chicken cooked in ghee is a treat for all spice lovers. Ghee adds richness to the masala and balances the heat and aroma.
For Chicken Ghee Roast: 250 grams of boneless chicken 2 tsp ghee 1 tsp red chilli powder ½ tsp turmeric powder 1 tsp tamarind paste 1 tsp jaggery Salt to taste 1 tsp cumin seeds 8-10 dried red chilies, soaked 1 tsp garlic paste 1 onion For Dosa Batter: 2 cups dosa batter (store-bought or homemade) Ghee for cooking
Grind the soaked red chillies, cumin seeds and tamarind into a fine paste.
Heat ghee in a pan and sauté garlic paste and onions.
Add chicken, turmeric, red chilli powder, and salt and cook until chicken is tender.
Add the prepared masala paste, and jaggery and cook until ghee separates.
Heat a pan, spread dosa batter in a circular shape and drizzle ghee.
Place a portion of the chicken ghee roast in the centre of the dosa.
Fold and serve hot with coconut chutney.
