As the popular salad turns a 100 this year, the chicken Caesar salad is a delicious yet quick option to enjoy for a light but hearty lunch. Packed with protein, fats and croutons for texture, pair the salad with a warm bowl of soup or enjoy a large portion as is.
½ cup mayonnaise ¼ cup grated parmesan cheese 2 tablespoons fresh lemon juice 2 teaspoons Dijon mustard 1 clove garlic, minced Salt and pepper, to taste 2-3 tablespoons water
2 grilled chicken breasts, sliced 1 tablespoon olive oil 1 head of romaine lettuce, washed and chopped ½ cup cherry tomatoes, halved ¼ cup freshly grated Parmesan cheese ¼ cup croutons Salt and pepper, to taste
Combine all the ingredients for the dressing in a bowl and set aside.
Tear the lettuce using your hands and layer the sliced chicken over it in a serving plate.
Add the cherry tomatoes, parmesan cheese and drizzle the olive oil on top.
Use a spoon to pour the dressing over the arrangement and finish off with some salt and pepper.
Add the croutons right at the end or when you're ready to serve the salad at room temperature.
