If you celebrate Chhath, you must be waiting to enjoy thekua. It is a delightful dry sweet snack that is a part of traditional offerings to the Sun God. Follow this step-by-step guide to make it.
1 tbsp grated coconut 1.25 cups wheat flour 3 tbsp ghee A pinch of salt ½ cup chopped jaggery 1 tsp fennel seeds 1.5 cups of oil ½ cup water ½ tsp green cardamom
In a deep vessel, combine atta with cardamom, salt, coconut, and fennel seeds.
Add hot ghee to this mix and combine the ingredients using a spoon.
While the ghee settles, prepare a mixture of water and jaggery in a saucepan.
Add the sugar syrup to the atta mixture until it starts taking the shape of a dough. Let it set for 15 minutes.
Shape the dough into cookies or leaves using a cookie cutter. Deep-fry these in hot oil.
Once fritters are golden and crispy, take them out in a paper towel. Enjoy your sweet snack or store in an airtight container.
