Chef Chinu keeps sharing amazing recipes on her social media account. She recently shared a delicious mango ice cream sandwich recipe, very easy to make at home.
1 cup coconut milk 1 cup fresh mango purée 1 tbsp cornstarch 1 tbsp vanilla extract Maple syrup or honey 20 digestive biscuits
Heat coconut milk. Take 3-4 tbsp milk, mix corn starch and add back till a tick paste forms. Then let it cool and add mango pulp.
Add honey or maple syrup and let the ice cream freeze. Blend the ice cream post this step to make a creamy filling.
In a tray, line up your biscuits and add the mango ice cream filling. Cover with another layer of biscuits.
Let the ice cream sandwich chill. Cut, serve and enjoy the cool dessert!
