Loaded with flavour of sweet, roasted shallots, this recipe for a delicious shallot bread trumps even the crowd-favourite garlic bread with cheese!
7-8 baby shallots 2 tablespoons olive oil ½ cup softened butter ½ cup grated parmesan/any cheese 3 tablespoons chopped basil 1 tablespoon chilli flakes Salt and pepper to taste
Cut off the tops and ends of the shallots and leave them inside their peel.
Drizzle with olive oil and sprinkle salt and pepper. Roast them in a hot oven for 10 minutes.
Once taken out, squeeze the roasted shallots into a bowl and mash them well.
Add the softened butter, chilli flakes, basil and cheese and mix everything together.
Season with salt and pepper and slather over bread that has been drizzled with olive oil.
Toast the shallot butter bread in a hot pan over medium-high heat.
Cover on top with a lid so the butter seeps into the crevices of the bread.
Once fully toasted, show them momentarily in a broiler so the top becomes golden-brown. Cut into bite-sized pieces and serve hot.
