Loaded with the flavours of chicken, cheese and herbs, this stuffed tomato recipe can be paired with rice, bread or rotis. Indulgent and delicious, this dish should be on your plate today!

6 medium-sized tomatoes 3 cups boiled chicken, shredded ½ cup carrots, shredded ½ cup spring onions, chopped 5 green chillies, finely chopped 1/3 cup cheese, grated ¼ cup walnuts, chopped ¼ cup coriander leaves, chopped ¼ cup dill leaves, chopped Salt, to taste

Wash the tomatoes, then slice the top and scoop out the pulp leaving a half-inch shell. Set aside.

In a bowl, place the shredded chicken, carrots, spring onions, green chillies, cheese, coriander leaves, dill and walnuts.

Add salt to taste and mix well. Place spoonfuls of the chicken mix into the tomatoes. Top with some more cheese if needed.

Place the stuffed tomatoes in a preheated oven for 20 minutes at 200 degrees. Serve hot when ready.
