Cheese Bouikos are delectable Middle Eastern pastries filled with a cheesy mixture. Here is a simple recipe for this dish.
2 cups all-purpose flour 1/2 cup unsalted butter, chilled and cubed 1/2 cup plain yogurt 1/2 teaspoon baking powder 1/2 teaspoon salt 1 cup feta cheese 1 cup mozzarella cheese 1/4 cup Parmesan cheese 1/4 cup chopped fresh parsley 1/4 teaspoon black pepper 1 egg (for egg wash)
Combine 2 cups all-purpose flour, 1/2 cup chilled cubed butter, 1/2 cup plain yogurt, 1/2 tsp baking powder, and 1/2 tsp salt for the dough.
For the filling, mix 1 cup crumbled feta, 1 cup shredded mozzarella, 1/4 cup grated Parmesan, chopped parsley, and black pepper.
Roll out the dough, place the filling, fold, and seal the edges. Brush with egg wash and bake at 190°C for 20-25 mins until golden brown.
