Kanjak also known as Kanya Puja, holds a special place during Navratri. The ritual involves worshipping young girls, usually nine in number, symbolising the divine feminine energy. As a part of the tradition, families prepare delectable offerings with Kanjak halwa being a quintessential delight. Kanjak halwa is a luscious semolina pudding that blends ghee, sugar and cardamom. Take a look at the recipe:
11 cup semolina (sooji) 1 cup sugar 3 cups water 1/4 cup ghee (clarified butter) A pinch of saffron threads 4-5 green cardamom pods, crushed Assorted nuts for garnishing (cashews, almonds, pistachios)
Heat ghee in a kadhai and roast the semolina over medium heat until golden brown. Stir constantly to prevent burning.
In another pot, heat water and sugar until the sugar dissolves completely to make a sugar syrup.
Pour the sugar syrup over the roasted semolina while stirring continuously to avoid lumps.
Add crushed cardamom and saffron threads to the mixture and continue cooking the halwa till it thickens and starts to leave the sides of the pan.
Garnish with assorted nuts for added crunch and visual appeal. Serve hot.
