Annakoot is a special vegetable prepared during the Govardhan celebration. It symbolises abundance, prosperity, and nutrition received from nature. Here is a short guide to cook it.
Saag of your choice Vegetables of your choice Fruits of your choice No onion, garlic Salt to taste 2-4 tsp turmeric powder 4-5 tsp red chilli powder 7-8 tsp coriander powder 2-3 tsp cumin, mustard seeds 3-4 tsp garam masala powder Water as needed Oil as needed
Cut vegetables and leafy greens into medium-sized chunks. Even if you collect a small amount, it would convert into 5-6 kg of ingredients.
Wash vegetables thoroughly. Cut fruits as well to be added to annakoot and for some natural sweetness.
Boil vegetables and fruits together and mash them. Add ghee/ oil in a kadhai, and add cumin seeds and mustard seeds.
Add the mashed mixture of vegetables, fruits, and greens. Add the spices and cover with the lid.
After the lot reduces in size, add salt and cook for 15-20 minutes.
Top annakoot with freshly chopped coriander and enjoy this dish after puja.
