Sorshe Ilish, a classic Bengali dish, is a must for Durga Puja celebrations. This delightful recipe combines fresh Hilsa fish with the richness of mustard paste and spices to create a flavourful meal best enjoyed with steamed rice.
750 gm Hilsa fish (cut into 6-7 pieces) 1/2 tsp turmeric powder 1/2 tbsp black mustard seeds 1 tbsp yellow mustard seeds 4 large green chillies 100 ml mustard oil + a few drops to finish 1/2 tsp nigella seeds Salt to taste
Soak the mustard seeds in warm water for 1-2 hours, then make a paste with salt and one green chilli.
Rub the Hilsa fish pieces with salt and turmeric powder; set them aside. Heat the mustard oil in a pan. Fry the fish pieces on both sides for 30-35 seconds each.
In the same oil, add nigella seeds and mustard paste. Cook for 1 minute on low heat.
Add 1 cup water, turmeric, and green chillies. Stir well and bring it to a boil.
Add the fried fish and salt. Cover and simmer for 8-10 minutes, then finish with a few drops of mustard oil.
