Move away from the heavy Alfredo sauce to make this flavoursome and low-calorie cauliflower sauce that is perfect for a pasta lunch made quick.
1 cup cauliflower florets 1 onion, chopped 4-5 garlic cloves, minced 1 teaspoon fresh thyme ½ cup water 1 vegetable stock cube 2 tablespoons olive oil Salt and pepper, to taste Pasta of choice
Heat the olive oil in a pan and sauté the onions and garlic until lightly browned.
Add the thyme leaves followed by the cauliflower and cook for a couple of minutes before adding the water and stock cube.
Cook until the cauliflower is tender and most of the liquid has evaporated.
Season with salt and pepper, cool completely and make a puree of the mixture in a blender.
Transfer the sauce back to the pan and add cooked pasta and serve warm.
