This kiddie-friendly recipe for macaroni and cheese is a great way to sneak in some nutrition into your family’s love for carb-loaded treats. Bake a big portion of this to bring in the weekend.
½ cup cauliflower florets 1 cup whole milk 1 cup water 1 vegetable stock cube 1.5 tablespoons olive oil 1 small onion, finely chopped 3 cloves garlic, finely chopped 2 sprigs thyme Salt and pepper, to taste
1 cup cooked macaroni ½ cup mozzarella cheese ½ cup grated cheddar ¼ cup toasted breadcrumbs
Add the milk, water and stock cube to a large pot and begin to simmer the cauliflower in it until soft.
Cool completely and blend into a smooth liquid.
Heat olive oil in a large pot and add the onions, garlic and thyme to sauté for 3-4 minutes.
Pour the liquid into the pot and bring to a simmer; season with salt and pepper.
Once it begins to thicken lightly, add the cheeses and turn off the heat.
Mix thoroughly to let everything melt and add the cooked macaroni.
Transfer to a greased baking tray and top up with the toasted breadcrumbs.
Bake in a preheated oven at 180 degrees for 15-20 minutes. Serve hot.
