Buying vegan mozzarella cheese can be expensive. You can make cashew nut mozzarella cheese by following a few easy steps and using just 5 ingredients. Give a vegan twist to pizza, sandwiches, lasagna, and baked treats.
3/4 cup water 1/4 cup raw cashew nuts 1 tablespoon nutritional yeast flakes 1 tablespoon white wine vinegar 1 tablespoon cornstarch 1/2 teaspoon salt
Wash the cashew nuts. Let them soak overnight or at least for 6-8 hours in lukewarm water. If not, use extremely hot water and soak for an hour.
After the cashews have softened (post soaking), mix all the ingredients listed in a blender and puree on high until creamy and lumps-free.
Heat a saucepan, keeping the flame low; pour the pureed cashew nut from the blender.
As it warms up, start slowly heating it and stirring it together. Don't leave it unsupervised. Continue to stir almost continuously till it gets the desired thickness and elasticity.
The cheese is now done. You can substitute it for conventional mozzarella cheese in a variety of recipes.
