Carrot is a healthy seasonal produce of winter that is enjoyed in plenty of ways. Here is an easy cupcake recipe you can prepare with carrots before the season ends.

1 cup flour 2 cups grated carrots 2/3 cup oil 2/3 cup sugar 2 eggs 1 teaspoon powdered cinnamon 1 teaspoon baking soda 1/2 teaspoon baking powder 1/4 teaspoon salt

Heat oven to 350 degrees F and grease 12 muffin tins. Keep aside. In a large mixing bowl, beat the eggs for a few seconds.

Gently stir in the carrots and oil. Add the remaining ingredients and stir well to combine (be careful not to over mix!).

Fill the muffin tins about 2/3 with the prepared mixture. Bake for 18-20 minutes.

Remove the cupcakes from oven and allow to cool for 10 minutes. Garnish with cream cheese frosting. Enjoy.
