Often when you go to a restaurant or get a chance to prepare chutney, the popular choices include coconut chutney, tomato chutney, onion chutney, coriander-mint chutney, etc shine out. However, carrot chutney can be a unique addition to the spread. Here is its recipe.
1-2 green chillies 2-3 garlic cloves 1.5 cups carrots 1 tbsp chana, urad dal 2-4 dry red chillies A pinch of turmeric, hing 7-8 curry leaves 1 tbsp oil 2 tsp lemon juice Salt to taste 1-inch ginger ½ tsp mustard, cumin seeds
Heat a saucepan and add oil to it. Roast urad and chana dal in it.
Saute ginger, garlic, curry leaves green chillies, and red chillies in the same pan.
While these ingredients cool off, saute carrots with salt and turmeric until they release the raw aroma.
Blend the sauteed and roasted ingredients in a jar.

Heat oil to prepare tempering of mustard seeds, red chillies, a pinch of hing, and cumin seeds.
After tempering, serve carrot chutney with snacks for a flavourful indulgence.
