A simple sabzi made with minimal ingredients, this cabbage preparation is a great accompaniment to dal-chawal or rotis for a weekday lunch made in a jiffy.
1 cabbage, shredded 1 large onion, sliced 7-8 curry leaves 2 green chillies 1 teaspoon turmeric powder ¼ cup grated coconut 2 tablespoons coconut oil 1 teaspoon mustard seeds Salt, to taste
Grind the coconut, curry leaves and green chillies to a paste and set aside.
Heat the oil in a large pan and temper the mustard seeds.
Add the sliced onions and saute for 4-5 minutes on a high flame, until browned lightly.
Add the coconut paste and cook for 2-3 minutes before adding the turmeric powder.
Tip in the cabbage and use a spatula to combine the flavour mixture into the cabbage.
Season with salt and mix thoroughly before placing a lid over the stir fry and allowing it to steam for 5-6 minutes.
Stir in-between and once the cabbage is wilted and glossy, turn off the flame. Serve warm.
