Have you tried buttermilk sambar or mor sambar? It is a lip-smacking South Indian dish that will leave you satiated. It pairs well with Malabar parotta or kothu parotta. Here is a quick recipe for you to replicate it at home.
¾ cup of curd 1 tsp sunflower oil Salt to taste ⅓ cup toor dal ¼ tsp hing, mustard seeds 15 sliced ladyfingers ½ tsp fenugreek seeds 2 tsp coriander seeds 7-8 curry leaves 5 dry red chillies 1 tsp sesame seed oil
Whisky curd and water to prepare a mixture without lumps.
Boil toor dal in a pressure cooker for at least five whistles and allow the pressure to settle.
Toss sliced lady fingers in sesame oil, salt, and fenugreek seeds until they are mushy.
Dry roast spices and keep them aside to cool off. Turn them into a fine powder. Mix it with yoghurt.
In the same pan, heat oil, mustard seeds, curry leaves, and red chillies. Cook yoghurt with spices in it.
Add cooked okra to it and let the sambar simmer for 8-10 minutes on low flame before serving it with rice.
